Wash, deseed, or pit the fruit. Weigh out 1000g, chop into small pieces, or puree. Or measure 750ml of fruit juice. Boil jars and twist-off lids or rinse with very hot water.
Mix 1 sachet of Gelfix with sugar, stir in the fruit/fruit juice in a large saucepan, and bring to a boil while stirring. Boil gently for at least 3 minutes, stirring continuously.
Conduct a setting test*. Skim the fruit mixture if necessary and immediately fill jars to the brim. Cover with lids, turn upside down immediately, and let stand on the lids for about 5 minutes. TIPS: - *Setting test: Pour 1-2 teaspoons of the hot mixture onto a plate. If it doesn't set, cook for another minute or, for sweet fruit, stir in 1 packet of Dr. Oetker Citric Acid. - If using frozen fruit, thaw it first and use the resulting juice. - The ingredients can be doubled (2 kg fruit with 1 kg sugar and 2 packets of Gelfix).
